Mexican food is like my TOP favorite food ever. I am never not in the mood for guacamole or tacos. I don't really drink, but if I was going to recommend a guilt-free cocktail, it would be my homemade margarita (with organic tequila of course). So in the spirit of one of my favorite holidays, here are two yummy recipes so you can celebrate without overdoing it on the nasties. YAY for strategy!
The BEST Guacamole Recipe Ever (yes, this is fact)
2 ripe avocados
freshly squeezed juice of 1 ripe lime (should feel squishy)
2 tbsp chopped cilantro
1/4 cup chopped Spanish onion (the red ones)
1/2 of a jalapeno, seeds removed and minced finely
1/4 cup chopped tomatoes (on the vine is my fav)
sea salt to taste (about 1/4 - 1/3 of a tsp)
Cut the avocados in half and remove the pit carefully! (Here's a video demo)
Spoon the avocado out of the peel and into a big bowl.
Mash with a fork.
Add in the lime and salt, taste for flavor.
Then add in all the other ingredients and mix together.
Serve with Terra chips or gluten-free non-GMO corn tortilla chips!
Homemade Margarita Recipe with Organic Tequila
2 oz Organic Tequila (I like Dulce Vida)
1 oz Fresh Squeezed Lime Juice
.75 oz Agave Nectar or Clover Honey
splash of sparkling lime water
To make it interesting, muddle fruit at the bottom of your glass.
Here are some combo ideas you can try:
Blueberries & Strawberries
Cucumber & Orange
Blackberries & Mint
Watermelon & Mint
Put tequila, lime juice, honey and sparkling water in a shaker with a handful ice.
Shake well then pour over muddled fruit.
You can salt the glass rim or just garnish with a lime slice.
